Nana's Mexican Manicotti Recipe

½ lb Lean Ground Beef
1 c Refried Beans
1 tsp Dried Crushed Oregano
½ tsp Ground Cumin
8 Manicotti Shells
1 ¼ c Water
8 oz Picante or Taco Sauce
8 oz Sour Cream
¼ c Green Onions finely chopped
¼ c Olives sliced
½ c Monterey Jack cheese shredded

Directions:

Combine cooked Ground Beef, Refried Beans, Oregano, Cumin - mix well
Fill uncooked (Nana says to cook (boil) til 1/2 done!) manicotti shells with meat mixture.
Arrange in a 10"x6"x2" baking dish.
Combine water and Picante or Taco Sauce; pour over manicott shells.
Cover with vented plastic wrap.
Microwave oven cook on HIGH for 10 minutes, turn dish 1/2 way around and turn the shells over once using tongs.
If cooking in oven, cover and heat on "medium" (I'm guessing here at 350º) for 17 to 19 minutes or until pasta is tender. Turn the dish 1/2 way around and turn the shells over once using tongs.

Combine Sour Cream, Onion & Olives. Spoon down the center of casserole, top with cheese. Return to microwave or oven and cook until the cheese is melted.
