1 lb. ground chuck
1 large onion
1 lb. yellow cheese
4 canned jalapeno peppers
1 c. yellow cornmeal
1 c. sweet milk
2 beaten eggs
3/4 tsp. salt
1/2 tsp soda
1/2 c. bacon drippings
15 oz. can of cream style yellow corn

Directions:
Directions:
Saute ground chuck until brown and place on paper towels to drain. Chop onion, grate cheese and chop peppers.
Prepare cornbread batter by mixing together cornmeal, milk, eggs, salt, soda and bacon drippings. To this batter add the cream corn.
Grease a large cast iron skillet and heat, then sprinkle with meal and allow to brown slightly. Pour half of cornmeal batter in skillet. Sprinkle grated cheese evenly on batter. Sprinkle cooked meat on top of cheese. Sprinkle chopped onion and pepper next. Top with remaining batter. Bake at 350º for 45-50 min. Serve hot.
