cake:
2 1/2 c. plain flour
1 c. buttermilk
2 c. sugar
1 1/2 c. cooking oil
1 tsp. soda
1 tsp. salt
1 tsp. vinegar
1 tsp. vanilla
2 tsp. cocoa
2 eggs
1 or 2 small bottles red food coloring (1 oz each)

icing:
1 stick butter
1 pkg.(8oz) cream cheese
1 tsp vanilla
1 pound box powdered sugar
1 c. chopped pecans

Directions:
Directions:
Cream sugar and oil. Add eggs and beat well. Mix cocoa, red coloring and vinegar, mixing well. Add this to sugar mixture. Mix flour alternately with buttermilk. Add vanilla and beat well. Bake at 350º for 35 min. Don't overbake.

icing:
Blend together butter and cream cheese, blending until smooth. Add vanilla, sugar and pecans. Spread on cake layers.
