Pie crust shell, blind baked for 15 minutes
4 peaches, peeled, sliced and lightly sweetened
3 heaping Tbsp. flour
1 C. sugar
1 C. heavy whipping cream

Directions:
Directions:
Preheat oven to 350ºF.
Place crust in pie dish and line with parchment paper or foil. Place weights (ceramic weights or dry beans) in pie crust and bake for 15 minutes. Remove from oven, remove pie weights and paper or foil and cool slightly.
Line crust with peaches. Mix flour and sugar. Add cream and mix well. Pour over peaches. Bake for approximately 1 hour until top is lightly browned. If edges of pie crust start to brown, cover with foil or pie crust liner.

This recipe was in my original Kitchen Witch Cookbook. I have been making this pie for many, many, many years and it is still a favorite when peaches are in season.
