3-4 heads Romaine Lettuce - depending on the size

First container:
6 egg whites
2 cups Pure Olive Oil ( Don't use extra virgin olive oil as it gives off a strong flavor.)
6-8 cloves garlic
4 Anchovies

Second container:
2 Tablespoons red wine vineager
About 1 teaspoons Capers

Third container:
Juice of 1/2 a lemon
1/4 teaspoon dry mustard

Salt and pepper

Prepared and set aside:
1 cup grated Parmesan cheese
1 1/2 cups croutons

Directions:
It is quite important to have a Cuisinart as the emulsifying of the egg whites and oil is fundamental to making a perfect Ceasar dressing.
1. Wash your lettuce and rip it up into bite size pieces and then set aside to drain
2. Place egg whites into your cuisinart and begin to blend. As the egg whites stiffen begin to add the olive oil, garlic cloves and anchovies. This should begin to look quite fluffy.
3. Add the red wine vineager and capers
4. Add the lemon juice and dry mustard
5. Once the dressing is fluffy and creamy add in salt and pepper to taste
6. Assemble your salad. This looks like combining your lettuce and dressing. After the lettuce is nice and coated add in the croutons and mix them up so they are nice and coated in the dressing as well. Finally add in your parmesan cheese
Serve by itself or with grilled meat of your choice!
