1 Cup sifted all purpose flour (41/4 ounces)
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup sugar
1 Tablespoon vanilla
1 teaspoon cinnamon
4-5 carrots peeled and grated
1 1/2 teaspoons toasted wheat germ
1/2 cup walnuts

Cream cheese frosting
8 ounces cream cheese at room temperature
8 Tablespoons butter at room temperature
1 1/2 teaspoons vanilla
4 cups powdered sugar

1. Prepare your pan or pans if doubling and preheat the oven to 350
2. Sift together flour, baking soda, and salt
Beat together eggs, and sugar. Add oil, vanilla and cinnamon. Stir in Flour mixture and then add grated carrots, wheat germ and walnuts.
Spoon batter into prepare pans.
3. Bake for 40-45 minutes or until cake passes the toothpick test.

I usually double this recipe and bake it in two 9" round pans. The frosting can also be doubled and the cake will bring a satisfying end to your sweet tooth.
