Ingredients: 1 lb. ground chicken Baby romaine lettuce (or Adult, it doesn't matter) 4 Tbsp Sweet Soy Glaze 1 oz Sweet Thai Chili Sauce 1 Tbsp butter 1 lime 2 Tbsp chopped cilantro 1 Lilah pepper - small diced 1 small onion - small diced 1/3 c salted peanuts 1 tsp sugar 2 Tbsp water

Directions:Candy the peanuts by heating a skillet on med-high heat. Add peanuts, sugar and water. Cooking, stirring until water has evaporated and peanuts are coated and lightly toasted (about 2-3 min) Set aside
Heat large drizzle of oil over med-high heat. Add pepper and onion. Season with salt and pepper and cook until tender. 5-8 min. Transfer veggies to a plate. Add a little more oil to pan and add ground chicken. Season with salt and pepper. Cook until browned and breaking up into small pieces. Add veggies back in and then add soy glaze, chili sauce and butter. Cook, stirring until mixture is thoroughly coated. 2-3 min more.
Remove from heat and stir in juice from the lime (to taste)
Serve mixture in lettuce leaves. Top with toasted nuts and cilantro |
