4 overripe bananas, mashed
2 large eggs
1/3 cup vegetable oil
1/2 cup sugar
2 tsp vanilla
12/3 cup bread flour
1/2 tsp baking soda
1 tbsp baking powder
1/2 tsp salt
1/3 cup macadamia nuts chopped
1/3 cup toasted coconut

Directions:
Directions:
Whisk together bananas, eggs, oil, sugar and vanilla. Whisk dry ingredients: flour, soda, baking powder, salt. Add wet ingredients to dry ingredients and stir until incorporated.
Mix macadamia nuts and coconut. Reserve 2 tbsp for topping. Add nuts and coconut to batter. Fill cupcake papers in a muffin pan, top with nut and coconut mixture.

Bake at 425 for 15 to 18 minutes.
