German Apple Cake Recipe

2 large eggs
1 c. vegetable oil
2 c. sugar
2 c. flour
1 tsp. vanilla
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 c. chopped walnuts
4 c. (4 or 5) Granny Smith apples, peeled and thinly sliced

Directions:

Preheat oven to 350º. Beat the eggs and oil with mixer until foamy. Add the sugar, flour, vanilla, baking soda, and cinnamon. Mix well. Batter will be thick, so you may need to mix by hand. Add the walnuts and apples. Bake in a slightly greased 9x13 pan at 350º for 45-60 minutes (until toothpick comes out clean). Let cool.

Icing
1 8 oz. pkg. cream cheese
2 T. melted butter
1 tsp. vanilla
2 c. powdered sugar
Combine all ingredients. Frost cake and enjoy.
