2 Boneless Chicken Breasts

2 Cups Minute Rice

1 ¾ Cups Chicken Broth

1 Bell Pepper chopped

1 sliced white or red onion

1 ½ Cups crushed pinapple (with juice)

1 ½ Cups BBQ Sauce

1 tsp Black Pepper

1 tsp Salt

1 tsp Garlic Powder



Directions:

Pre heat oven to 350º

Add rice to the bottom of a 9 x13 baking dish

Pour chicken broth over rice

Cut chicken breasts into bite size pieces (about 1 inch cubes) and add to a bowl

Season chicken with salt, pepper, and garlic powder

Toss chicken with BBQ sauce and add in sliced pepper and onion to coat

Spread chicken and vegetables over the rice

Add crushed pinapple over top of the chicken and vegetables including the juices

Bake uncovered at 350 for approximately 45 minutes or until chicken pieces are cooked through
