1½ c. sugar
2 tsp dry mustard
2 tsp salt
⅔ c. wine vinegar
3 TBSP onion juice, use a juicer or chop onions very fine
2 c. salad oil (not olive oil)
3 TBSP poppy seeds
Mixed greens
Fresh spinach
Canned pears, drained and cut
Kiwi
Strawberries
Pecans

Mix together sugar, mustard and salt. Stir in wine vinegar and onion juice. Slowly add salad oil and beat with mixer, (This takes a long time but is worth it) usually 15-20 minutes. A food processor doesn't work very well.

Toss remaining ingredients together and add dressing right before serving.

This recipe comes with a sad story. In the summer of 2019 my cousin Tony Koch's 20 year old daughter Kimberly died following complications from an allergic reaction to peanuts. We were in Wisconsin when it was time for the funeral in Fort Atkinson and your grandma asked us to go with her. It was a heartbreaking experience and yet the Koch family expressed that they were thankful we were there. At the luncheon following the funeral, this salad was served. It had been made by a friend of my Aunt Joan's, Bobi Long, who shared the recipe with me after we commented about how delicious the salad was. I believe this was the last time I saw Tony and my Aunt Joan and Uncle Bill before they passed away in 2022 and 2023. The Koch's were hugely influential to me growing up and I hold all the members of the family close in my heart.
