3 Tbsp. butter
2/3 C. minced onion
3 Tbsp. flour
Salt and pepper to taste
1 1/2 C. milk
4 large russet potatoes, thinly sliced
1 C. grated cheese (optional)

Directions:
Preheat oven to 375ºF.
Using a medium saucepan, cook onions in butter over medium heat until translucent, about 5 minutes. Stir in flour, salt and pepper. Mix until lightly browned. Using a whisk, gradually add the milk and cook until thickened. Add grated cheese if desired. In a buttered 2 qt. casserole dish, arrange half of the potatoes in a layer. Pour half the sauce over the top. Repeat. Sprinkle with paprika. Bake, covered, for 45 minutes. Uncover and bake an additional 20-25 minutes, or until tender. Rest 5 minutes before serving.
