1 lb. Ground pork sausage
8 oz. Cream Cheese
2 pkg. "Grand" buttermilk biscuits

Preheat your oven to 350º. Set out the cream cheese so it can warm to room temperature. In a skillet, brown the sausage, crumbling it as it browns. Once done, drain the excess grease and put the sausage in a mixing bowl and add the cream cheese. Mix this together, thoroughly.

On a cutting board, take each biscuit and flatten it out by hand, stretching it out to form a bigger circle. Using a spoon, fill one half of the biscuit with the sausage mixture. Fold over the other half of the biscuit to make the pocket and seal the edges together, crimping with the tines of a fork.

Place these pockets on a parchment covered baking sheet pan and, following the instructions on the biscuit package, bake them until done.

Makes 16 pockets.

This is the basic recipe for these biscuit and gravy pockets. Obviously there are many ingredients you can add, such as, sauteed diced onions, sauteed diced peppers, minced garlic, hot sauce, shredded cheese, small spoon of scrambled eggs, etc.
