1 cup polenta
11/2 tsp salt
Pepper
2 tbsp butter, cut into small pieces
2 oz grated cheese, preferably Valley Ford Estero Gold or Parmesan or Vella’s Dry Jack

Directions:
Directions:
Oven 350
Pour 4 cups of water into 8” square pan. Add polenta, salt and pepper and whisk thoroughly. Scatter butter pieces but do not stir. Bake for 45 minutes. Whisk polenta, then add cheese and bake for another 15 minutes. Let rest for 5 minutes.
