5 cups cauliflower florets
1 tbsp unsalted butter
1 tbsp olive oil
1 tsp minced garlic
1 tsp kosher salt
1/2 tsp pepper
2 tbsp minced fresh parsley
1 tsp lemon zest

Directions:
Directions:
Process cauliflower florets in food processor in batches. Pulse till size of rice.
Melt butter in 12” skillet, add oil and sauté garlic for 1 minute. Add cauliflower, salt and pepper. Cover and cook for about 4 to 6 minutes, stirring occasionally. Stir in parsley and lemon juice. Serve
