2 1/2 c. diced potatoes
1/2 c. diced celery
1/2 c. chopped onion
2 1/2 c. water
1 pkg. California blend veggies - chopped
2 cans cream of mushroom soup
1 lb. Velveeta cheese - cubed
Directions:
Directions:
Bring the first 6 ingredients to a boil and then simmer 20 minutes.

Add the soup and cheese.

Stir just until cheese melts.
