Grilled Tomatoes on Soda Bread Recipe

6 medium tomatoes cut into 1- inch thick slices

4 thick slices of Soda Bread, 1-inch thick (see bread recipe)

Balsamic vinegar, for drizzling

Salt and fresh ground pepper

Shredded Parmesan cheese

Olive oil or Truffle oil for coating the tomatoes

Directions:
Directions:
1} if you have a Griddle pan, coat it with a bit of Oil and brush it evenly before placing
the tomatoes on it. Get it nice and hot and place the tomatoes on it, for 2 minutes per side or until the tomatoes have softened and start to have black edges.
Or line a cookie sheet with aluminum foil, coat with oil, place your tomatoes on it and broil each side until soft.
When the edges begin to have color, 2 to 3 minutes turn over and repeat the cooking time, about 4 to 6 minutes total.

2} Lightly toast your soda bread. Place each slice on a plate and cover with 3 to 4 cooked slices of tomatoes. Drizzle a bit of Balsamic Vinegar to taste and the sprinkle with shredded Parmesan cheese.
If there is any juice in the pan from the tomatoes pour it over the tomatoes,
salt and pepper to taste.
