4 boneless pork chops
2 pkg. instant Apple/ Cinnamon Oatmeal
(put in blender and "liquidly)
1 egg
½ cup milk

3 Tbls. brown sugar
1 tsp. cinnamon
½ tsp. nutmeg
4 tart apples, sliced thin
(Granny Smith, Pink Lady, McIntosh)
1 cup apple juice

Directions:

Beat egg, add milk and stir. Dip pork chop in mixture, then into oatmeal. Add about 2 Tbls. oil to a skillet. When is oil is hot, place breaded pork chops in the skillet and brown both sides. Transfer to baking dish. Stir together brown sugar, cinnamon, and nutmeg. Place thinly sliced apples on pork chops. Sprinkle brown sugar mixture over apples. Pour apple juice along the edge of the pork chops. Cover tightly with foil. Bake at 350º for 1 hour.

This can also be made in a crock pot, layering the same. Cook on high for 4 hours or low for 6 hours.
