2 14 oz. cans black-eyed peas, drained
1 15 oz. can white hominy, drained
2 medium tomatoes, chopped
1/2 c. parsley, chopped
1 medium onion, chopped
2 cloves of garlic, minced
1 red pepper, chopped
1 jalapeno, finely chopped
8 oz. Italian dressing

Directions:
Directions:
Combine all ingredients and mix well, pouring Italian dressing over mixture being sure everything is well coated.

Refrigerate and let marinate at least 2 hours stirring occassionally.

Serve with tortilla chips or eat as side dish or on burgers/hot dogs.
