1 tbsp vegetable oil
4 boneless skinless chicken breasts or 8 thighs
1 small onion, chopped
2 cloves garlic, minced
1/2 sweet red or yellow pepper, cubed
3/4 cup chicken stock
1/4 cup ketchup
1 tbsp vinegar
2 tsp granulated sugar
1 tsp soy sauce
1/4 tsp each salt and pepper
2 tsp cornstarch
1 green onion, chopped

Directions:
Heat oil in a large skillet over medium-high heat and brown the chicken on all sides. Remove chicken to a plate. Reduce heat to medium, add onion, garlic, and red pepper to the skillet, and cook until onion is softened, about 4 minutes. In a small bowl, whisk together chicken stock, ketchup, vinegar, sugar, soy sauce, salt, and pepper. Add this mixture to the pan, return the chicken and any accumulated juices, and bring to a boil. Reduce heat, cover, and simmer until chicken is cooked through, about 6 minutes. Mix cornstarch with 1/4 cup water and add to the pan, cooking and stirring until the sauce thickens, about 2 minutes. Sprinkle with green onion before serving.
