2 tbsp olive oil
4 skinless, boneless chicken breasts
1/4 tsp salt
1/4 tsp pepper
1 can Campbell's condensed tomato with basil and oregano soup
1/2 cup Campbell's ready-to-use chicken broth
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp finely chopped fresh parsley

Preheat the Broiler: Set your oven's broiler to high heat.
Cook the Chicken: Heat olive oil in a large oven-proof skillet over medium-high heat. Season the chicken breasts evenly with salt and pepper. Cook the chicken for 3 to 5 minutes per side until nicely browned. Once done, transfer the chicken to a plate.
Prepare the Sauce: In the same skillet, stir in the condensed tomato soup and chicken broth. Bring the mixture to a simmer.
Simmer the Chicken: Return the chicken to the skillet and spoon the sauce over the chicken. Cover and let it cook for about 7 to 8 minutes, or until the chicken is cooked through.
Add Cheese and Broil: In a small bowl, toss together the mozzarella and Parmesan cheeses. Sprinkle the cheese mixture over the chicken in the skillet. Place the skillet under the broiler and broil for 2 to 3 minutes, or until the cheese is melted and golden.
Garnish and Serve: Sprinkle the chicken with chopped parsley before serving. This dish pairs wonderfully with cooked pasta or creamy polenta.


Tip: For a quicker weeknight meal, you can skip the broiling step. Instead, after adding the cheese, simply cover the skillet and let it cook for another 2 to 3 minutes, or until the cheese is melted. This method keeps all the cooking on the stovetop and reduces preparation time.
