1 whole, unpeeled orange
½ cup orange juice
¾ cup chocolate chips
1 egg
½ cup softened butter or margarine
1 ¾ cup all-purpose flour
¾ cup granulated sugar (I usually put a little less)
1 tsp baking powder
1 tsp baking soda

Begin by preheating your oven to 400°F, or adjust to 375°F if you're using a convection oven. Start with the orange by cutting it into eight segments and removing any seeds. Place these orange pieces into a blender, along with some orange juice. Blend briefly; you should aim to keep small bits of orange peel visible, to avoid over-blending.

In a separate mixing bowl, combine the orange puree with an egg and melted butter, and set this mixture aside. In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, and baking soda. Combine the wet and dry ingredients, stirring just enough to incorporate everything. Add chocolate chips to the batter, being careful not to overmix.

Scoop the batter into muffin cups. This recipe should yield about 16 school-sized muffins. Bake them in the preheated oven for 18 minutes, though you may need to extend the baking time if you are making larger muffins.

I usually freeze the muffins in a large Ziploc and take them out of the freezer the night before or the early morning of school so they are ready for recess or lunch
