1 pound of cod fillets (cut into cubes)
¼ cup of butter
¼ cup flour
1 ¼ cups of millk
¼ tsp salt
Pepper to taste
1 onion, minced
½ cup of bread crumbs
½ cup of cheddar cheese

*Make sure fish is dry +++*

Begin by preheating your oven to 375º F. Prepare a baking dish (or individual dishes if making single servings) by greasing it, then place the dried cod fillets in the dish.

In a heavy saucepan, melt butter over medium heat. Stir in the flour until the mixture is smooth, then remove from heat. Gradually stir in half of the milk and return the saucepan to the heat. Continue to beat the mixture until it becomes smooth and shiny. Gradually add the remaining milk, along with salt, pepper, and onion, cooking and stirring until the sauce is smooth and thickened.

Pour the prepared sauce evenly over the cod in the baking dish. Sprinkle bread crumbs across the top of the sauce. Bake in the preheated oven for about 10-15 minutes, then add cheese on top of the breadcrumbs and continue to bake for another 10-15 minutes. The dish is ready when the sauce is bubbling and the fish is thoroughly cooked, which should total 20-30 minutes of baking time.
