1 tsp baking powder
1 tsp salt
2/3 cup granulated sugar or brown sugar
2 eggs
1/2 cup butter, softened or melted
1 tbsp vanilla extract
2 to 3 ripe bananas
1 cup semi-sweet chocolate chips
1 tbsp cinnamon
1/2 cup plain Greek yogurt (optional)

Begin by preheating your oven to a temperature between 350°F to 375°F and prepare a muffin tray with baking cups. In a large mixing bowl, combine the ripe bananas, eggs, butter, vanilla extract, and sugar. Mix these ingredients at low speed until well combined, making sure to scrape the sides of the bowl to incorporate all ingredients evenly.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, continuing to mix and scrape the bowl thoroughly to ensure a smooth batter. If you choose to include Greek yogurt, fold it into the batter at this stage.

Next, stir in the chocolate chips until they are evenly distributed throughout the batter. Scoop approximately 1/3 cup of the batter into each muffin cup, filling them up to create well-sized muffins. Bake in the preheated oven for about 25 to 30 minutes, or until the muffins are lightly golden and a toothpick inserted into the center comes out clean.

Once baked, remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a cooling rack or another cool surface to cool completely.
