For one pie:
3 T clear jel (or cornstarch)
¾ c sugar
¾ c water
3 ½ c fresh or frozen saskatoons
1 tsp lemon juice

Pie crust for 2 layers

Directions:
Directions:
In saucepan, mix sugar and clear jel well. Add water. Bring to boil and cook till thickened. Add saskatoons and lemon juice. I usually pick lots of berries in summer and freeze them so that's what I use here. The frozen berries makes the filling instantly ready to use, no chilling needed. Place filling in unbaked pie crust, then top with another crust, closing edges carefully so it doesn't bubble over while baking. Make sure to vent the top so steam can escape. Bake at 375º - 400º for 15 -20 minutes. Turn oven to 350º and continue to bake for 20-30 minutes till well browned.

I completely acknowledge that saskatoons and blueberries are not the same berry. However, I like the texture of the saskatoon and the colour of the blueberry, so i sometimes mix the two. The flavour is delicious!
