Preheat grill to High.

Cedar plank to fit your grill (soak in water 3 to 4 hours to prevent burning)
Salmon filets (4-6 oz per serving) or large filet to serve as appetizer
Place salmon on plank - skin side down
Rub with canola oil
Season with salt and pepper
Light sprinkle of red pepper - OPTIONAL
Coat with brown sugar
Place plank directly on grill and cover
Cook on high for 5 - 10 minutes.
Reduce to medium for 5 - 10 minutes.
Watch for flame ups and have spray bottle of water handy.
Remove plank with salmon from grill and place on a large platter.

Dill Sauce
8 oz sour cream or Greek yogurt (or mixture of both)
1 - 2 Tbsp. dill paste
Dash of lemon juice
Salt and pepper to taste
