3 T. olive oil
2 lg. onions, finely chopped
Coarse salt
2 1/2 lbs. Yukon Gold potatoes, peeled and quartered
4 cloves of garlic, crushed

Directions:
Directions:
In large skillet, heat 1 T. olive oil over medium heat.

Add onions, season with coarse salt.

Cook, stirring frequently until onions are caramelized (35-40 min.).

In a medium saucepan, combine potatoes and garlic, adding enough water to cover by one inch.

Bring to boil, add salt and cover, Reduce heat, and simmer until tender. (15-20 min.)

Drain, reserving liquid, then return potatoes and garlic to pan.

Add 2 T. olive oil, season with salt.

Mash until smooth adding reserved liquid as needed.

Stir in onions and serve immediately.
