Salad:
90 ounces three cheese tortellini
1/2 cup green onions
1/2 cup chopped fresh red pepper
1- 1 1/2 teaspoons of chopped fresh basil
1- 6oz jar artichoke hearts drained and chopped
1 package small rounds of pepperoni or salami
1 cup Blanched Broccoli florets
1/2 cup fresh shredded Parmesan cheese
1 package cherry tomatoes
1- 8 oz can sliced black olives

Dressing:
1/2 teaspoon minced fresh garlic
1 -cup olive oil
1/2 - cup fresh chopped parsley
1- Package of Italian salad dressing
1/4 cup white vinegar
1/4 cup water

Directions:
Directions:
Cook tortellini according to package instructions

Blanche broccoli for three minutes then bathe in cold water add to large bowl

Add all other ingredients into a large serving bowl

Make the dressing

Pour dressing over salad and chill for at least 30 minute

Before serving add a little more shredded Parmesan cheese to the top

This salad was a family favorite for lunches at the cabin. We spent one week during the summer at a resort with extended family, nieces, nephews. Aunts and Uncles and of course my parents. To my children this was always the best week of the whole summer. I hope when you make this salad for your family you will find that same love we had for food and family.

You can of course add any other vegetables you like I have added, asparagus blanched, carrot strings, anchovies, zucchini, yellow squash
