2 Eggs
1 1/2 c Wesson Oil
2 c Sugar
3 c Fresh Shredded/Peeled Green Apples
1 tsp Vanilla
3 c Flour
1 tsp Salt
1 tsp Soda
1 c Nuts (optional)


ICING:
1/4 lb Butter (not margarine)
1 c Evaporated Milk
1 Tbsp Corn Starch
2 Eff yolks
1 c Sugar
12 Caramels
1 c Nuts

CAKE:
Beats eggs, oil & sugar. Add the apples and vanilla. Sift together flour, salt, soda & nuts. Add to wet mixture. Bake in a 13x9x2 5/8 pan at 350º for about 50 minutes.

ICING:
Mix butter, milk, cornstarch, egg yolks and sugar. Cook for 12 minutes on medium to medium high heat. Add the caramels and cook until dissolved. Remove from heat and add nuts. Beat a bit and let cool. Once cool pour/spread on cake.

Hints: Mix corn starch and sugar together that way it wont lump.
You can also put the frosting on the hot cake.
If frosting bubbles while cooking, turn down the heat!
