2 lbs chicken, ham, sausage
2 bell peppers
2 onions
4 stalks celery
1/4 cup minced garlic
1/2 cup chipotle peppers (optional)
3 tbsp paprika
1/4 cup cajun
1/4 cup oregano
2 tbsp parsley
1 can tomato paste
1/4 cup white wine
2 can diced tomatoes
4 cup chicken stock
2 cup plain rice
1/3 cup lime or lemon juice
Ingredients can be altered for personal preference and dietary restrictions.

Cube meat to bite size pieces. Medium dice vegetables.
Sauté meat in olive oil over medium heat.
When meat starts to cook, add vegetables, garlic, and any other hot peppers you'd like to add.
Add in the dry herbs and spices, sauté for 2 minutes.
Add the tomato paste, stir to mix through and continue to cook until fully incorporated.
Add white wine, cook until this reduces.
Reduce heat to medium-low. Add tomato, stock, rice, and lemon juice.
Cover and stir every few minutes as the rice will stick if left alone.
Cook until rice is done.

Note: You may need to add stock as it is cooking. It shouldn't be 'soupy' when done but should have some liquid.
