Spinach Rice


Ingredients:

4 stalks green onion, chopped
3 stalks celery, finely chopped
⅓ cup olive oil
1 cup fresh parsley, chopped or 1 tablespoon dried
˝ cup fresh dill, or 1 tablespoon dried
1 lb fresh spinach, coarsely chopped
1 cup uncooked white rice
3 cups chicken bone broth
Salt and pepper to taste

Directions:
Directions:
In large saucepan and medium heat, add olive oil. Add onion and celery and sauté until tender, about 2 minutes Add rice and cook for 2 minutes. Add spinach, parsley and dill and cook for 2 minutes. Add broth, stir, cover and cook for 25 minutes or until rice is tender. After 20 minutes, if there is no liquid left in pan, add a little more broth or water.
