Directions:Oreo Crust: Preheat oven to 350. Begin by pulsing the Oreos in a food processor until you have fine crumbs. Mix in melted butter until well combined. Press mixture into bottom and slightly up the sides of a 9 inch springform pan. Bake 10 minutes. Allow to cool while you prepare the filling.
Coffee Cheesecake: In a large bowl, mix cream cheese, sugar, and cornstarch until smooth and creamy. Dissolve the instant coffee in the vanilla extract, then blend this into the cream cheese mixture along with the sour cream. Incorporate the eggs and yolks one at a time, mixing just enough to combine. Pour the filling into your prepared crust and bake in a water bath at 350 for 1 hour. Let cool in over with door ajar another hour, then chill in the refrigerator for 8 hours to set completely.
Coffee Ganache: Heat the heavy cream and dissolve the instant coffee in it. Melt the white chocolate over a double boiler, then whisk in the coffee cream until smooth. Pour the ganache over the chilled cheesecake, spreading it evenly. Refrigerate until the ganache is set. |
