4 lbs russet potatoes peeled
1 large yellow onion
5 large eggs
Vegetable oil
1/3 cup chives

Directions:
Directions:
Preheat oven to 425 degrees. Put a 9 inch pan in oven to heat it. Grate potatoes on onion into a bowl. Using your hands squeeze water out of the potatoes and onion and transfer to large bowl. Add eggs and 6 tbsp oil and season with s/p.
Remove pan from oven and coat with 2 tbsp oil. Add Potatoe mixture. Bake 2 hours.
