4 tbsp olive oil
2 small yellow onions
2 tbsp minced garlic
2 red bell peppers
4 tbsp chili powder
1 tbsp oregano
2 tsp cumin
1 tsp dried basil
1 tsp paprika
1 tsp salt
1 tsp pepper
14.5 oz can roasted diced tomatoes
14.5 oz can black beans, rinsed and drained
14.5 oz can white beans, rinsed and drained
2 cup corn
2 cup veg stock
Toppings: cheddar cheese, sour cream, avocado, cilantro, chives, tortilla strips

Directions:

1. Place a large heavy dutch oven over medium heat. Pour in olive oil, then saute onion for 3-4 minutes. Add the pepper and cook until tender 6-8 minutes.
2. Mince the garlic and measure out all of the spices into a small bowl. Set aside.
3. Add garlic and spices to pan and cook for a minute.
4. Add undrained tomatoes, and then the beans, corn and vegetable stock.
5. Stir to combine everything. Reduce heat as needed to maintain gentle simmer, and stir occasionally for 25-30 minutes.
6. Remove 1 1/2 cup of the chili and blend in blender. Mix back into chili and stir to combine.
Garnish with toppings.
