3 C. chicken breast, cooked, deboned, and cut into 1" cubes (or shredded)
4 Tbsp. butter
1/2 C. flour
2 C. chicken broth
1 C. milk
1 tsp. salt
1/2 tsp. curry powder
1 tsp. lemon juice
1 C. mayonnaise
1 bunch broccoli, cooked and cut into small pieces

Preheat oven to 325ºF.
Cook butter and flour in skillet over medium heat to form a roux. Cook for about 2 minutes until lightly brown. Add milk and broth slowly and whisk together to make a sauce. Add salt and curry powder and whisk into mixture. Add to chicken.
Place half the broccoli into bottom of a casserole dish. cover with chicken mixture. Place remaining half of broccoli on top. Bake until bubbly, approximately 45 minutes.

This recipe was in the original Kitchen Witch cookbook and has never failed to impress. It is versatile and the chicken mixture may be made ahead and served in cream puffs, in phyllo cups with or without the broccoli (cut into smaller pieces).
