11½ -13 cup flour
3 pkgs yeast
¾ cup warm water
3½ cups warm milk
¼ cup sugar
2 T salt
6 T shortening

Directions:
Directions:
Spoon flour into measuring cup, level off and pour onto wax paper
In a large bowl, sprinkle yeast into warm water. Stir until dissolved
Add warm milk, sugar, salt and shortening.
Stir in 4 cups of flour. Beat with mixture until smooth.
Add 2 more cups of flour, beat vigorously until smooth.. Scrape sides of bowl.
Stir in remaining 5½ - 7 cups of flour gradually. Use enough flour to make a soft dough which leaves the side of the bowl, adding more if necessary.
Turn out onto a floured board and round up into a ball.
Knead 5 - 10 minutes until dough is smooth, elastic and no longer sticky.
Cover with plastic wrap and then a towel.
Let rest for 20 minutes on board.
Punch down and divide dough into 3 or 4 equal portions
Shape into loaves
Place into greased bread pans
Brush surface of dough with oil, cover pans loosely with with oiled wax paper, then plastic wrap.
Refrigerate 2 to 24 hours. Uncover
Puncture any bubbles which may have formed.
Bake at 400º for 30 - 40 minutes or until done.
Brush top crust with butter.
Cool on racks.
