1 Tbs. Olive Oil
1½ tsp. Granulated Garlic
4 c. Frozen Corn Kernels
1 tsp. Salt
½ tsp. Black Pepper
⅓ c. Mayonnaise
⅓ c. Sour Cream
1 tsp. Lime Zest
1-2 Tbs. Lime Juice
½ tsp. Hot Mexican Chili Powder
½ c. Cotija Cheese (can sub Queso Fresco or Feta)
½ c. Fresh Cilantro (Optional)

Directions:
Directions:
1) Heat oil and add corn, granulated garlic, salt, and pepper. Cook about 5 minutes until corn is tender. Set aside and allow to cool (You don't want the corn too hot hen adding mayo!)
2) Stir in lime zest and juice, chili powder, cheese, sour cream, and mayo.
3) Serve hot or chilled.
