Cinnamon Rolls Recipe

1 c. scalded milk
½ c. shortening (don't use oil)
1 package yeast dissolved in ¼ c. water
3 eggs
1 tsp. salt
½ c. sugar
4-½ to 5-½ c. flour
½ c. white sugar
⅔ c. brown sugar
Cinnamon
1 stick margarine
1 c. pecans, chopped, optional

Add shortening to milk and cool. Dissolve yeast in ¼ c. water. Beat eggs, salt and sugar together. Add 1-½ c. flour and stir well. Add yeast and 3-4 c. more flour till dough isn't sticky or stiff (don't add all at once).

Knead dough. Let rise. Roll out to ½ inch thick. cover with cinnamon and sugar and melted margarine. Use ⅔ c. brown sugar and ½ c. white sugar and cinnamon to taste. Roll and cut 1 inch or more thick. Let rise to double the size.

Bake until rolls pull away from side of pan. Make sure pan is greased and rolls are dotted with margarine. Sprinkle with brown sugar and nuts.
