1 c. blue or yellow cornmeal
1 c. all-purpose flour
2 tsp. sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
¼ tsp. garlic powder
1-½ c. buttermilk
¼ c. jalapeno chiles, stems and seeds removed, chopped fine
1 c. minced onions
2 eggs, beaten well
1 c. grated cheddar cheese

Directions:

Combine all dry ingredients in medium bowl.

Heat milk with jalapenos and onions and allow to cool. Combine eggs and cheese in small bowl.

Add milk mixture, eggs and cheese to dry ingredients and blend until smooth in big bowl.

Pour mixture into greased 9-inch square pan and bake until golden brown and firm.
