2- 6oz. jar marinated artichoke hearts
2 Tablesps. oil
1- 2½- 3 lb. fryer chicken or breasts-cut up
Flour for dredging
1-1lb. can tomatoes
2 cloves garlic, minced
1¼ teasps. salt
½ teasp. oregano
½ teasp. basil
½ teasp. pepper
½ lb. mushrooms, sliced
½ cup sherry

Drain artichoke hearts & combine liquid and oil in skillet. Dredge chicken with flour and cook in oil until browned on all sides. Place chicken pieces in casserole. Add tomatoes, garlic, salt, oregano, basil, pepper and mushrooms, stirring well. Cover-bake 350º 1 hour (*Cook, then refrigerate until ready to serve the following night) Add sherry and artichoke hearts, return to oven and reheat about 30 minutes at 350º. Garnish with parsley & serve with cooked rice or spaghetti.
