3 cups water
4 grams loose leaf black tea
¼ tsp ground cloves
1½ tsp ground cinnamon
¾ tsp ground ginger
¾ tsp ground cardamom
¾ tsp ground nutmeg
¾ tsp ground allspice
3 tbsp pure maple syrup

1. In a small saucepan, add spices and water. Bring to a boil, whisking frequently. Once water is boiling, turn the heat off and allow to steep for 5 minutes.
2. After 5 minutes, turn heat back on and add black tea and maple syrup. Allow water to lightly boil. Once boiling, turn heat off and allow to steep for 5-10 minutes depending on how strong you want the concentrate.
3. Strain the mixture over a large bowl using a coffee filter or fine mesh strainer. Store the concentrate in a glass jar or pitcher for up to 2 weeks in the fridge.
