12 LARGE-XLARGE HARD BOILED EGGS, COOLED & PEELED

3/4 CUP HELLMAN'S MAYONNAISE
2 TSP YELLOW MUSTARD OR DIJON MUSTARD
1 TSP SALT
1/2 TSP PEPPER

1 TSP GRATED ONION OR 1 LARGE GREEN ONION, FINELY CHOPPED
2 RIBS CELERY, FINELY CHOPPED
1 1/2 TSP DRIED DILL OR 2 TBSP FRESH DILL, CHOPPED

Cut the eggs in half and remove the yolks. Finely chop the whites and place them into a bowl.

Place the yolks into a medium bowl and mash them with the mayonnaise, mustard, salt & pepper, until smooth and creamy. A food processor can be used for this if you are making a large batch of this recipe, (remove the yolk mixture from the food processor before continuing with the recipe, as you don't want to mince the rest of the ingredients).

Add in the onion, celery, & dill to the yolk mixture and stir well.

Add in the chopped egg whites and gently stir until combined.

Use in sandwiches, lettuce wraps, tortilla wraps, open faced sandwiches, etc..

NOTE: THIS MAKES A VERY CREAMY & FLUFFY EGG SALAD. IT TAKES MORE TIME TO PREPARE THAN THE QUICK & EASY VERSION, BUT IT NEVER DISAPPOINTS. MY GEORGIA WOULD DEFINITELY CONSIDER THESE 'FUNERAL WORTHY'.
