Ingredients: 370g plain flour, plus more to dust ½ tsp salt 250g diced unsalted butter 125g golden caster sugar 1 egg yolk 1 tsp vanilla bean paste or extract 100g dark or milk chocolate

Directions:1: Sift the flour and salt into a bowl and set aside. Cream the butter and sugar in a large bowl using a wooden spoon or whisk until well combined and fluffy. Add the yolk and vanilla and mix it in well, then work in the flour.Once the mixture comes together as a dough, dust your hands with flour and wrap it in clingfilm, chill for an hour. After an hour heat the oven to 180C/160ºC fan.
2: Roll out the dough on a floured board to 3mm thick using plenty of flour as it is quite sticky. Cut out into preferred shape and place on 2 baking sheets lined with parchment paper bake for 12-15 minutes until pale gold.Remove from the oven and leave to cool on the trays for a few minutes before carefully transferring to wire rack. They will firm up as they cool Leave until completely cold.
3: Put the chocolate into a bowl over gently simmering water. Stir occasionally until melted. Cool slightly then spoon into a piping bag seal the bag and snip the end and drizzle over the biscuit to decorate. |
