4 cups all purpose flour
1 1/2 cups water
1/2 tbsp. quick rise yeast
2 tsp. salt
1 1/2 tsp. granulated sugar

Mix all dry ingredients together then add water until the dough is a sticky consistency that will stretch with the spoon. Stir as little as possible while incorporating the ingredients. Rub olive oil on the inside of a large bowl or container. Place the dough inside and cover. Refrigerate for at least 10 hours.

Pre-heat the oven to 480ºF and place an ungreased baking sheet inside. Remove dough from fridge, uncover and sprinkle with flour. Sprinkle flour over a dry working space and dump the dough out of the bowl while still chilled. Cut the dough into 8-10 square shaped portions. To shape each bun, pull opposite corners up at the same time and stretch diagonally across and gently press in. Do the same with the other opposing corners.

Take the baking sheet out of the oven and place parchment on top. Place the buns on the parchment paper with the folded pieces facing up. Place the baking sheet in the oven. Splash 1/4 cup of water in the bottom of the oven and close door.

Bake for 8 minutes.
