Pistachio Cookies Recipe

1 c. shortening
4 eggs
2 c. sugar
1 tsp. vanilla
2 tsp. almond extract
1 c. milk
1 box pistachio pudding mix
5 tsp. baking powder
10 drops of green food coloring
4 c. (2 lbs.) flour
1/2 c. pecans (optional)

Glaze, optional:
2 c. sifted powdered sugar
2-4 Tbsp. whole milk
1 tsp. clear vanilla extract or almond extract

Directions:
Directions:
Cream shortening, sugar, and eggs. Add milk, food coloring, vanilla, and almond extract. Slowly add pudding mix, baking powder, flour and continue to mix and combine. You can also add 1/2 c. pecans if you'd like.

Once thoroughly mixed, scoop onto a cookie sheet about 2 inches apart, they will expand.

Bake at 350º for 11-15 minutes. They will be golden brown on the bottom.

Optional: make a powder sugar glaze and top with festive sprinkles.

Glaze:
In a medium sized bowl add the sifted powdered sugar, 3 Tablespoons milk, and vanilla or almond extract into the bowl. Slowly whisk together until the glaze is smooth and reaches desired consistency. If it is too thick then add more liquid, one TEASPOON at a time.
