2 cups leftover mashed potatoes, chilled
1 egg, beaten
1/2 cup grated cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour
2 tablespoons fresh chives, chopped
Salt and pepper to taste
1/2 teaspoon garlic powder
Oil for frying

Directions:
Directions:
In a large bowl, combine the mashed potatoes, beaten egg, cheddar cheese, Parmesan cheese, flour, chives, salt, pepper, and garlic powder. Stir until well mixed.
Heat oil in a large skillet over medium heat.
Using two spoons or a small ice cream scoop, form the potato mixture into balls and carefully drop them into the hot oil.
Fry until golden brown on all sides, about 2-3 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Serve hot as a snack or appetizer, optionally with sour cream or your favorite dipping sauce.
