• Pasta, any shape • 1 large carrot • 2 stalks celery • 1 red onion • 1 Jar of Passata • Canned tomatoes • Olive oil • anchovy paste • ½ lbs Ground beef • ½ lbs Ground pork • 4-5 slices of Bacon, cut into lardons • Garlic • Salt and pepper • Chili flakes • Basic Italian seasoning mix • Parmesan cheese rind

Directions:Put one large pot on medium heat, brown pork, beef and bacon lardons. Once cooked, take the meat out of the pot and set it aside.
Add the chopped carrots, onions and celery (chop to desired size, I prefer larger chunks of vegetables) to the same pot that you browned the meat in and cook (you may need to add a little Olive Oil to the pot).
Once the veggies are soft and slightly browned, add the meat back to the pot, and add the jar of passata, the can of tomatoes, whole garlic cloves, a parmesan cheese rind, a Tbsp of anchovy paste, and the Italian seasoning mix.
Depending on how quickly you need the food ready, heat until the sauce is bubbling and then drop heat to low and leave for a minimum of 30mins to 4 hours. You may need to add water to the sauce if you simmer for a long period of time to avoid it becoming too thick.
When you are ready to use the sauce, bring a separate pot of water to the boil, add salt and pasta, cook al dente. Before you strain the pasta, take a few tablespoons of the pasta water and add it to your sauce and mix. Sprinkle with some chili flakes, serve and enjoy.
