2 cups finely diced tart apple (2 large + 1 small)
1 cup sugar
¼ cup oil
1 egg, beaten
1 cup unsifted flour
1 teasp. cinnamon
1 teasp. soda
¼ teasp. salt
1 teasp. vanilla
½ cup chopped walnuts

Place apples in a bowl & stir in sugar. Let stand 30 minutes. Add oil & egg & blend well. Sift flour with cinnamon, soda and salt. Stir into apple mixture. Add vanilla and walnuts. Turn into well greased & floured 8" square pan. Bake 350º for 45-50 mins. or until cake tester inserted in center comes out clean. Cool in pan 10 minutes. Turn out and cool completely on wire rack. Dust top with powdered sugar or frost, if desired.
