FOR ONE DOZEN EGGS:

12 LARGE-XLARGE HARD BOILED EGGS, COOLED, PEELED & CHOPPED
1 TSP GRATED ONION OR 1 GREEN ONION, CHOPPED
1 TSP SALT
1/4 TSP BLACK PEPPER
1 TSP DRY DILL WEED OR 1 TBSP FRESH DILL WEED, CHOPPED
3/4 CUP HELLMAN'S MAYONNAISE
1 1/2 TSP YELLOW MUSTARD
1 LARGE RIB CELERY, CHOPPED FINE

Place all ingredients into a bowl and mix well. Use for sandwiches, lettuce wraps, tortilla wraps, etc.


NOTE: WHY USE GRATED ONION INSTEAD OF CHOPPED OR MINCED ONION? THIS IS FOR THOSE PEOPLE WHO SAY THEY DON'T LIKE ONION BUT HAVE NO IDEA THAT IT'S THE SECRET INGREDIENT IN MANY TASTY DISHES THAT THEY EAT ON A REGULAR BASIS. HAHA. SERIOUSLY THOUGH, I LOVE HOW IT GIVES LOTS OF FLAVOUR WITHOUT ADDING BULK OR 'LITTLE BITS' TO A RECIPE. YOU, OF COURSE, WILL ALWAYS WANT TO LEAVE IT OUT IF THERE IS AN ALLERGY OR SENSITIVITY.

IT'S AN EXCELLENT WAY TO SNEAK IN THE FLAVOUR WHEN YOU HAVE YOUNG CHILDREN OR SPOILED ADULTS.
