1 1/2 LBS COOKED SKINLESS CHICKEN, CHOPPED OR SHREDDED
2-3 RIBS OF CELERY, CHOPPED
1/4 CUP DRIED CRANBERRIES, CHOPPED
1/4 CUP TOASTED PECANS, CHOPPED

1/4 CUP HELLMAN'S MAYONNAISE
1/4-1/2 CUP PLAIN GREEK YOGURT OR SOUR CREAM
1 TBSP FRESH TARRAGON, CHOPPED
1 TBSP FRESH LEMON JUICE
1 TSP SALT
1/2 TSP BLACK PEPPER

In a large bowl, place first 4 ingredients.

In a separate bowl, mix together well the mayonnaise dressing and add it to the chicken mixture. Gently stir together and serve as the filling for sandwiches, lettuce wraps, open faced sandwiches, etc.

NOTE: THIS RECIPE IS DELICIOUS WITH SLICED GRAPES IN PLACE OF THE CRANBERRIES OR SWITCH UP THE PECANS WITH WHATEVER NUT YOU LIKE!

ALSO - COOKED CHICKEN BREASTS SHRED IN NO TIME IF YOU HAVE A STAND MIXER WITH THE PADDLE ATTACHMENT. JUST THROW THEM IN WHOLE AND TURN ON THE MIXER! DONE IN SECONDS.
